Tender chicken breast is poached, shredded and rolled in locally crafted, preservative-free tortillas from JJ Tortillas, then baked under our house-made salsa verde and topped with cheese. Tomatillos, jalapeño and fresh cilantro give the sauce its brightness, though it stays mild. A gentler, greener counterpart to our chipotle red. Two enchiladas per serving. Heat and eat.
Keep refrigerated or frozen. Thaw before cooking.
Remove lid and cover with foil. Bake in preheated 350˚ oven for 30 to 35 minutes, or until internal temperature is 165˚. Can also be air fried but cooking times and temperatures will vary. Cooked until heated through and cheese is melted.
