Egg Muffins with Chorizo, Red Peppers and Cheese

Chorizo, red pepper, sharp cheddar cheese, cottage cheese, onion, are mixed with an egg custard and baked in muffin pans. Breakfast, lunch, or a light dinner with a salad – these muffins are full of protein and an easy quick, healthy meal. Two muffins per serving. Heat and Eat.

Eggs, whole milk, cottage cheese, chorizo, sharp cheddar cheese, red pepper, onion, garlic, black pepper.

Keep refrigerated or frozen.

Fully cooked.

To heat: Place in a microwave and heat with 15 second intervals until desired temperature. Or place in a 300˚ oven for 10 minutes.

Muffins can be served at room temperature or hot.
