Egg Muffins with Potatoes, Red Peppers and Sharp Cheddar Cheese

Seasoned potatoes, red pepper, sharp cheddar cheese, cottage cheese are mixed with an egg custard and baked in muffin pans. Breakfast, lunch, or a light dinner with a salad – these muffins are full of protein and an easy quick, healthy meal. Two muffins per serving. Heat and Eat.

Eggs, whole milk, cottage cheese, russett potatoes, sharp cheddar cheese, red pepper, onion, garlic, black pepper, ancho chili powder, smoked paprika.

Keep refrigerated or frozen.

Fully cooked.

To heat: Remove plastic lid and place in a microwave and heat with 15 second intervals until desired temperature. Or place in a 300˚ oven for 10 minutes. Aluminum packaging can be microwaved.

Muffins can be served at room temperature or hot.
