Local black beans, red and green peppers, onions, garlic, organic corn, and cilantro are mixed together, then rolled into flour tortillas and topped with our own red enchilada sauce with cocoa and chipotle, and mozzarella cheese. Bake. Two enchiladas per serving.
Remove lid and cover with foil. Bake in preheated 350˚ oven for 30 to 35 minutes, or until heated through and lightly browned. Can be microwaved in aluminum pan – remove plastic lid.
